| As the Belgians know, there are no short cuts to a good fry. We start with raw Idaho potatoes. We peel them, we cut them, and then we soak them in water. We blanch them in a low temperature peanut oil, let them weep, and then fry them a second time, to order, at high temperature. Just like they do in Belgium.
